12 ounces lasagna noodles , about
1/4 cup olive oil
1 1/2 teaspoons minced onions
1 1/2 teaspoons minced garlic
1 1/4 lbs ground veal
1 1/4 lbs ground beef
2 teaspoons dried oregano , crushed
1 tablespoon finely chopped fresh rosemary
3/4 teaspoon salt , divided , about
1/2 teaspoon black pepper , divided , about
1 1/2 cups ricotta cheese
1 1/2 teaspoons finely chopped parsley
1/2 cup half-and-half
1 lb mozzarella cheese , grated
1 lb Fontina cheese , grated
2 cups marinara sauce ( bottled or home-made )
1 cup freshly grated parmigiano-reggiano cheese
1 cup freshly grated romano cheese

Instructions

1.Preheat your oven to 375°F (190°C).
2.Boil lasagna noodles in salted water according to the package instructions.
3.In a large skillet over medium-high heat, heat olive oil and saute onions and garlic until fragrant.
4.Add in ground veal, ground beef, oregano, chopped rosemary, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook until browned and crumbled.
5.In a separate bowl, mix ricotta cheese, chopped parsley, half-and-half, 1/4 teaspoon salt and 1/4 teaspoon pepper.
6.Arrange lasagna noodles in a 9x13 inch baking dish. Top with 1/3 of the meat mixture, 1/3 of the ricotta mixture, 1/3 of grated mozzarella, 1/3 of grated Fontina, and a ladle of marinara sauce. Repeat layering until all layers are used up.
7.Finish with a layer of grated parmigiano-reggiano cheese and grated romano cheese.
8.Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 10 minutes or until the cheese is melted and bubbly. Let stand for 10 minutes before serving.
