Ingredients

2 red bell peppers , seeded and coarsely chopped
1 cucumber , peeled , seeded , and coarsely chopped
14 ounces tomatoes , large and juicy ones , skinned , seeded and coarsely chopped
4 tablespoons olive oil
2 tablespoons sherry wine vinegar
salt and pepper
2 tablespoons olive oil
1 garlic clove , halved
2 slices bread , crusts removed and cut into 1/4 inch cubes
sea salt
diced green and red bell pepper
finely diced seeded cucumber
chopped scallion
ice cube

Instructions

1.Make the soup by blending the red bell peppers, cucumber, tomatoes, olive oil, sherry wine vinegar and salt and pepper.
2.Refrigerate the soup until cold.
3.Make the croutons by heating olive oil in a pan and adding garlic. Cook until garlic is golden brown and then remove it from the oil.
4.Add bread cubes to the same pan and fry until golden brown, sprinkling with sea salt.
5.Serve the soup with croutons, diced green and red bell pepper, finely-diced seeded cucumber, chopped scallion and ice cubes.
