2 cups chicken broth
2 cans coconut milk , unsweetened
1/4 teaspoon salt
1/8 teaspoon ground pepper
1 dash curry powder , to taste
1 honeydew melon , quartered , seeded , rind removed , each piece sliced again

Instructions

1.In a saucepan, mix chicken broth, coconut milk, curry powder, salt and pepper. Bring to a boil
2.Turn the heat off and let it cool
3.Process the honeydew melon in a blender until it is a puree
4.Sieve the melon puree to remove any lumps and fibres
5.Combine the melon puree and coconut broth
6.Chill before serving
