Ingredients

250 ml milk
125 g superfine sugar
4 eggs
12 clementines
300 ml double cream
25 g dark chocolate
Iced Clementine Parfait is a refreshing and fruity dessert that is perfect for hot summer days. The custard base is flavored with freshly squeezed clementine juice and zest, giving it a tangy and sweet flavor. The addition of whipped cream makes it light and fluffy, while grated dark chocolate adds a touch of richness. This dessert can be made ahead of time and kept in the freezer until needed, making it a great option for parties or when you want a treat ready and waiting.

Instructions

1.In a small saucepan, heat the milk with 50g of sugar until it comes to a simmer.
2.In a mixing bowl, whisk the eggs until light and frothy then gradually pour the hot milk mixture into the eggs, whisking constantly.
3.Pour the mixture back into the saucepan and cook over low heat, stirring constantly, for about 4-5 minutes or until it thickens enough to coat the back of a spoon.
4.Zest six of the clementines and squeeze the juice of all twelve of them. In a separate bowl, mix the zest and juice with the remaining sugar.
5.Whip the double cream until it reaches soft peaks.
6.Fold the clementine mixture into the custard, followed by the whipped cream.
7.Pour the mixture into glasses or ramekins and freeze for at least 5 hours until solid.
8.To serve, top with grated dark chocolate and a few thin slices of clementine.
