Ingredients

2 cups milk
1 vanilla bean
1/2 cup raisins , chopped
1/4 cup dark rum or 1/4 cup hot water
5 egg yolks
1/3 cup fragrant honey
1/2 cup creme fraiche

Instructions

1.In a saucepan, heat milk, vanilla bean and raisins until it simmers for 5 minutes.
2.Remove from heat, and add rum or hot water.
3.In another bowl, beat egg yolks and honey together.
4.Combine egg yolk mixture into the saucepan with the milk mixture and stir well.
5.Return the saucepan to medium heat and stir until the mixture thickens. Do not over-boil to avoid curdling the egg.
6.Let the mixture cool before stirring in creme fraiche. Place in the freezer for at least 2 hours before serving.
