Ingredients

2 egg yolks
2/3 cup sugar
3/4 cup milk
2 cups heavy cream

1 large ripe mango , plus additional slices for garnish ( about 1 pound )

Instructions

1.In a heat-proof bowl, whisk together the egg yolks and sugar until pale and frothy.
2.In a saucepan, heat the milk until it is hot but not boiling.
3.Gradually pour the hot milk into the egg mixture, whisking constantly.
4.Pour the mixture back into the saucepan and heat it over low heat, stirring constantly, until it thickens and coats the back of a spoon.
5.Remove from heat and let cool to room temperature.
6.In the meantime, puree the mango flesh until smooth.
7.Add the mango puree to the cooled custard mixture, and stir to combine.
8.Whip the heavy cream until it forms stiff peaks.
9.Fold the whipped cream into the mango custard mixture.
10.Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
11.Transfer to a freezer-safe container and freeze until firm, at least two hours or overnight.
