Ingredients

1/4 large sweet onion
1 large zucchini
1 large red bell pepper
1 large carrot
1 teaspoon olive oil
1 1/2 cups no-salt-added tomato sauce
1/2 cup water
1 tablespoon ketchup
2 tablespoons vegan parmesan cheese ( or low-fat regular parmesan cheese )
1 pinch dried basil
1 pinch sea salt
1/2 teaspoon lemon juice
1 cup 1 % low fat cottage cheese
1 egg
8 white whole wheat lasagna noodles , cooked , drained and cut into thirds
150 g lowfat mozzarella cheese
Lasagna is a popular Italian dish, but it has become a staple in American cuisine as well. This Hush-Hush Kid Friendly Lasagna takes the classic dish and gives it an American twist by hiding vegetables and using low-fat cheese for a healthier alternative. It’s an easy way to sneak in extra veggies for kids and picky eaters. Pair this hearty meal with a garden salad or garlic bread for a filling and satisfying dinner.

Instructions

1.Preheat your oven to 375°F.
2.Combine onion, zucchini, red bell pepper, and carrot in a food processor. Pulse to chop finely.
3.Heat olive oil in a large skillet over medium-high heat. Add chopped vegetables and sauté for 5 minutes.
4.Reduce the heat and add tomato sauce, water, ketchup, vegan parmesan cheese, basil, sea salt, and lemon juice to the skillet. Simmer for 10 minutes, stirring occasionally.
5.While the sauce cooks, in a mixing bowl, combine cottage cheese and egg until well combined.
6.In a 9x13 inch baking dish, spread a thin layer of tomato sauce mixture in the bottom. Add a layer of lasagna noodles on top of the sauce. Spoon a layer of cottage cheese mixture over the noodles. Add another layer of tomato sauce mixture over the cottage cheese. Repeat layering until all ingredients are used, ending with a top layer of tomato sauce mixture.
7.Sprinkle shredded mozzarella cheese over the top of the lasagna. Cover the dish with foil.
8.Bake for 30-35 minutes or until bubbly and hot. Remove from the oven and let it sit for 10-15 minutes before serving.

PROS

This lasagna is a healthy alternative to traditional lasagna by swapping out beef for vegetables.
