1 pound smoked sausage links , cut into 1/4-inch slices
1/4 pound bacon , chopped
2 cups chopped okra
1 can diced tomatoes with green chile peppers
1/2 cup unsalted butter
2/3 cup all-purpose flour
2 cups chopped onion
1/2 cup chopped green onions
2/3 cup finely chopped green bell pepper
2/3 cup finely chopped celery
2 tablespoons chopped fresh parsley
2 tablespoons minced garlic
2 cups water
salt to taste
ground black pepper to taste
1/4 teaspoon cayenne pepper
1 teaspoon dried thyme
2 bay leaves
6 cups water
2 pounds uncooked medium shrimp , peeled and deveined

Instructions

1.In a large pot over medium heat, cook sausage and bacon until browned. Remove and set aside.
2.In the same pot, add okra and diced tomatoes. Cook for 10-15 minutes until okra is tender. Remove from pot and set aside.
3.Melt butter in the same pot and gradually stir in flour. Cook for 10-15 minutes until roux is browned, stirring constantly.
4.Add onions, green onions, bell pepper, celery, parsley, and garlic to the pot with the roux. Cook for 5-10 minutes until vegetables are tender.
5.Add 2 cups of water, salt, black pepper, cayenne pepper, thyme, bay leaves, and cooked sausage and bacon to the pot. Bring to a boil, then reduce heat and simmer for 1 hour.
6.Add the cooked okra and tomatoes to the pot and simmer for an additional 30 minutes.
7.Add shrimp to the pot and cook for 5-10 minutes until shrimp turn pink.
8.Serve hot over rice.
