Ingredients

3 medium eggplants
1 tablespoon lemon juice
6 tablespoons flour
4 tablespoons butter
1/2 cup hot milk ( more may be necessary )
1/8 teaspoon nutmeg
kefalotiri or parmesan cheese
salt and pepper

Instructions

1.Pierce the eggplants a few times with a fork and place them on a baking sheet lined with parchment paper. Roast in a preheated 425 F (220 C) oven for 45-50 minutes or until the skin is blackened and the eggplants are soft.
2.Remove from the oven and let cool slightly. Peel and chop the flesh.
3.In a saucepan, melt the butter over medium heat. Add the flour and cook for 2 minutes, whisking constantly. Gradually add the hot milk, whisking continuously until the sauce thickens.
4.Add the chopped eggplants to the sauce, along with the lemon juice, nutmeg, salt, and pepper. Cook over low heat for 5-10 minutes, stirring occasionally. The mixture will thicken and become creamy.
