Ingredients

2 packets active dry yeast
1 cup lukewarm water
2 tablespoons sugar
4 1/2 - 4 3/4 cups flour
1/2 teaspoon salt
1 cup cold butter , cut into cubes
2 eggs , separated
1/2 cup sour cream
1/2 lb poppy seed , ground ( it is very important to grind them . I use a coffee grinder )
1/2 cup butter
1 cup whole milk
1 1/4 cups sugar

2 lemons , zest of
The Hungarian Poppy Seed Roll (Beigli) is often served during the Christmas season and throughout the year as a traditional pastry in Hungary. The pastry has two fillings, poppy seeds, and walnuts. The poppy seed filling is more popular and it is often flavored with lemon zest and vanilla extract. The dough is made with flour, sour cream, and butter which gives it a rich flavor and texture. This pastry is not too sweet but it has a very satisfying and nutty flavor that makes it unique. It is perfect for sharing with friends and family, especially during tea time or special occasions.

Instructions

1.Activate the yeast by placing it in a small bowl with sugar and lukewarm water. Let it sit for 10 minutes until it froths.
2.In a large bowl mix flour, salt, and cubed butter with your hands.
3.Add egg yolks and sour cream to the flour mixture, stir until combined.
4.Mix in the yeast mixture.
5.Knead the dough for 5-10 minutes, then divide it in half.
6.Preheat your oven to 350°F (177°C).
7.For the filling, start by grinding poppy seeds (very important) with a coffee grinder or food processor.
8.Melt 1/2 cup butter in a pan over medium heat, then add ground poppy seeds, whole milk, sugar, and lemon zest to the butter.
9.Cook the filling for 3-5 minutes, mixing occasionally and making sure it doesn't burn. It should thicken and be homogenous when finished.
10.Roll out a half of dough into a rectangular shape.
11.Spread half of the filling over the dough, leave a 1-inch border on all sides.
12.Roll the dough into a log-shape, seal the edges by pinching them and place it on a baking tray with parchment paper.
13.Brush the log with beaten egg whites, pierce it in several places with a fork.
14.Repeat the process with the second half of dough and filling.
15.Bake the logs for 35-40 minutes until lightly browned. Let the logs cool before slicing.
