4 cups flour
1 cup granulated sugar
2/3 cup honey
1/2 cup unsalted butter
1 teaspoon ground cinnamon

4 teaspoons baking soda
1 lemon , rind of , grated
1 egg
extra egg ( s ) for egg wash
3 drops red food coloring ( optional )
poppy seed ( optional )
1 egg white
powdered sugar , sifted ( as much as needed to make fairly stiff paste )
3 drops food coloring , of choice

Instructions

1.In a large mixing bowl, mix together flour, sugar, cinnamon, and cloves. Make a well in the center of the mixture.
2.In a small saucepan, heat honey and butter until melted and smooth. Remove from heat, stir in lemon zest, and allow it to cool.
3.In a separate bowl, beat the egg until fluffy and add it to the flour mixture. Mix well.
4.Add the honey mixture to the flour mixture and stir until it forms a stiff dough. Cover with plastic wrap and let it rest in a cool place for at least 12 hours.
5.Preheat oven to 350F. Roll dough out to approximately 1/4 inch thick. Cut out desired shapes with cookie cutters. Place on a greased baking sheet.
6.Beat egg yolks and food coloring together and brush onto the cookies.
7.Sprinkle with poppy seeds if desired.
8.Bake for 15-20 minutes or until golden brown.
9.Remove from oven and brush with egg white mixed with powdered sugar and food coloring. Allow to cool completely before serving.
