The Hungarian Chicken Vegetable Dumpling Soup is a classic Hungarian dish that is both hearty and flavorful. This soup is perfect for a cold day or when you need a filling and satisfying meal. The broth is made with sweet paprika, which gives it a smoky and slightly spicy flavor. The vegetables add color and nutrients, while the dumplings are light and fluffy and add a nice texture to the soup. Traditionally, this soup is served with a dollop of sour cream on top to balance out the spiciness of the paprika. This recipe is perfect for a family meal or for meal prepping for the week.

Instructions

1.In a large soup pot, melt the margarine or butter over medium heat.
2.Add the diced carrots, sliced celery, and diced onions. Cook for a few minutes until the vegetables start to soften.
3.Add the bone-in chicken breast, whole tomatoes with juice, minced parsley, sweet paprika, water, chicken base, salt, and pepper. Bring the mixture to a boil and then reduce the heat and let it simmer for about 1 hour.
4.While the soup simmers, make the dumplings. In a large bowl, mix together the flour, baking powder, salt, and milk until a dough forms.
5.Drop spoonfuls of the dough into the simmering soup and let them cook for about 10 minutes.
6.Remove the chicken breast from the soup and shred the meat. Return it to the pot and let it cook for a few more minutes before serving.
