Ingredients

2 beef rib racks , 8 bones each racks
9 cups apple wood chips
4 teaspoons Chinese five spice powder
2 tablespoons salt
1 tablespoon fresh ground pepper
1 tablespoon lightly packed brown sugar
2 teaspoons chili flakes
2 cups hoisin sauce
3 oranges , juice of
2 tablespoons grated ginger
1 1/2 tablespoons garlic , chopped
1/4 cup dry sherry
2 tablespoons sesame seeds

Instructions

1.Preheat smoker to 275ºF.
2.In a small bowl, mix together Chinese five spice, salt, pepper, brown sugar, and chili flakes.
3.Rub spice mixture all over the beef ribs.
4.Place apple wood chips in the smoker.
5.Place beef ribs on the smoker grates, bone-side down.
6.Smoke the beef ribs for 4-6 hours, or until the internal temperature reaches 195ºF.
7.While the beef ribs are smoking, prepare the glaze by mixing together hoisin sauce, orange juice, grated ginger, chopped garlic, and dry sherry in a saucepan.
8.Bring the glaze to a simmer and cook until thickened.
9.Once the beef ribs are done smoking, brush the glaze onto the ribs and sprinkle with sesame seeds.
10.Let the glaze set for a few minutes before serving.
