1 1/2 cups dried garbanzo beans , soaked overnight drained
1/2 cup tahini
3/4 cup olive oil

1 small red Thai chile , stemmed seeded

Instructions

1.Rinse the soaked garbanzo beans and place in a large pot. Add enough water to cover the beans by 2 inches and bring to a boil over high heat. Reduce the heat and simmer, skimming any foam that forms, until the beans are soft, 1 to 1½ hours. Drain and reserve the cooking liquid.
2.In a food processor, combine the tahini, olive oil, lemon juice, cumin, garlic, chili, and salt to taste. Pulse until smooth. Add the cooked garbanzo beans and purée until very smooth, scraping down the sides of the bowl as necessary. If needed, add reserved cooking liquid, a little at a time, until the hummus is light and fluffy.
3.To make the Spicy Red Pepper Sauce, place the bell pepper, chili pepper, garlic, lemon juice, and salt in a food processor, and purée until smooth. Slowly add the olive oil and pulse until well mixed.
4.Transfer the hummus to a serving bowl and use a spoon or spatula to make a well in the center. Pour the Spicy Red Pepper Sauce into the well and sprinkle with paprika. Serve with chips or pita bread.
