Ingredients

2 1/4 lbs liempo ( pork belly , skin on )
2 bay leaves
175 ml vinegar
1 tablespoon salted bean curd , mashed
60 ml soy sauce
1 teaspoon fresh ground black pepper
75 g raw peanuts , shelled
35 g brown sugar
1 tablespoon minced garlic

Instructions

1.Wash pork belly and cut into 2 inch pieces.
2.In a pot, add the pork belly and enough water to cover it.
3.Bring to a boil and let it cook for about 5 minutes.
4.Drain the water and add the remaining ingredients except for the peanuts.
5.Stir to combine all ingredients and add enough water to cover the pork belly.
6.Bring to a boil then reduce heat to low and simmer for about 1 hour
7.Add the peanuts and continue to cook for another 30 minutes or until the meat is tender.
8.Serve hot and enjoy!
