Hulda's Krumkake is a traditional Norwegian dessert that is often served with coffee or tea on special occasions like Christmas or weddings. The cookies are made with a thin batter, which is poured onto a Krumkake iron and baked over the stove top. When done, the cookie is rolled into a cone shape while still warm and left to cool, which gives it its signature shape. Krumkake is popular in several Scandinavian countries and is usually served with whipped cream or jam in the center.

Instructions

.In a large mixing bowl, whisk together the eggs and sugar until thoroughly combined.
.Add in the freshly ground cardamom, brandy and melted butter, mixing well each time.
.Slowly add in the cold water, mixing continuously.
.Add in the flour and whisk the mixture until smooth.
.Preheat a Krumkake iron over the stove top.
.Once heated, pour a tablespoon of the batter onto the iron, close the lid and bake for a minute or two, until the cookie is lightly golden.
.Remove the cookie from the iron with a spatula and place them on a cooling rack.
.Repeat the process with the remaining batter.
