Ingredients

1 lb ground lamb or 1 lb ground goat meat
1/4 lb minced lamb fat or 1/4 lb goat fat
4 green onions , chopped finely
10 garlic cloves , chopped finely
4 green chilies , chopped finely ( jalapeno 's are best )
1 tablespoon ground cumin
2 tablespoons salt
1 tablespoon soy sauce
100 dumpling wrappers

Instructions

1.In a large mixing bowl, combine the ground lamb or goat meat, minced lamb fat or goat fat, chopped green onions, chopped garlic cloves, chopped green chilies, ground cumin, salt, and soy sauce until well mixed.
2.Take a dumpling wrapper and spoon 1-2 teaspoons of filling in the center.
3.Wet the edges of the wrapper with water and fold it in half, pressing the edges together to seal the dumpling.
4.Repeat until all the filling is used up.
5.Heat a non-stick pan over medium-high heat and add 1 tablespoon of oil.
6.Place the dumplings in the pan and fry until the bottoms are golden brown.
7.Pour in enough water to come halfway up the dumplings, cover the pan, and cook for 8-10 minutes or until the dumplings are cooked through.
8.Serve hot with dipping sauce of your choice.
