2 lamb backstraps , trimmed of all fat & sinew
4 teaspoons sun-dried tomato tapenade
4 minced garlic cloves
1 teaspoon dried rosemary
2 puff pastry sheets
olive oil flavored cooking spray
1 egg
1/4 cup milk
Huey's Lamb Sausage Rolls are a snack that can be enjoyed for breakfast, lunch, or dinner. Instructions

1.Preheat the oven to 200°C and line a baking sheet with parchment paper.
2.Cut the lamb backstraps into pieces and place them in a food processor. Pulse until the lamb is minced.
3.Add in sun-dried tomato tapenade, minced garlic, and dried rosemary to the minced lamb. Mix until well combined.
4.Roll out the puff pastry sheets on a floured surface and cut them in half.
5.Divide the lamb mixture into four portions, and shape each portion into a long sausage strip the length of the puff pastry.
6.Place the sausage strip in the middle of each pastry rectangle, then roll in the pastry to encase the sausage completely.
7.Use a sharp knife to cut each long roll into four smaller rolls.
8.Place the rolls onto the prepared baking sheet and brush with a mix of beaten egg and milk. Use a sharp knife to make a few small incisions on top of each roll.
9.Bake the rolls for 25 minutes or until golden and cooked through.
10.Serve hot or cold with sides of your choice.
