1 jar chargrilled red capsicums
4 garlic cloves , crushed
1/2 red onion , cut into wedges
6 pitted black olives , finely sliced , kalamata are the tastiest
1 cup italian tomato , cooking sauce
The Huey's Italian sausage dog is a unique twist on the traditional hot dog recipe that is sure to tantalize your taste buds. The recipe combines well-flavoured thick sausages, chargrilled red capsicums, and delicious kalamata olives with Italian tomato cooking sauce and fresh basil, served in a fresh French baguette. Instructions

1.Preheat oven to 210°C
2.Toss onions, garlic, capsicum and olives on a lined baking tray with oil and salt and pepper.
3.Roast for 15-20 minutes or until golden and tender. Set aside.
4.Slice sausages lengthwise and brush with olive oil. Grill cut side down for three minutes.
5.Slice the baguettes in a V shape and brush with olive oil. Toast in an oven at 210°C
6.Spread tomato sauce on the baguettes, arrange the sausages and roast veg, top with cheese and parmesan.
7.Garnish with fresh basil and freshly ground pepper.
