Ingredients

3 -4 lamb necks ( trimmed of all sinew , and most of the fat , and cubed . You can probably get your butcher to do this . )
1 carrot , peeled and diced
2 celery ribs , diced
1 large onion , peeled and diced
2 leeks , thoroughly washed and diced
6 spring onions , diced
salt , to taste
fresh ground pepper , to taste
8 black peppercorns
6 juniper berries
2 star anise
4 -6 large floury potatoes , scrubbed but not peeled
chopped parsley

Instructions

1.Preheat oven to 325°F.
2.Prepare all the ingredients using the measurements provided. Heat some oil in a large casserole dish over high heat.
3.Add cubed lamb, salt, and pepper, and brown for 3 minutes, then remove.
4.Add onion, celery, carrot, and leeks and cook for 5 minutes until softened.
5.Place the lamb back into the casserole dish.
6.Add 4 cups of water.
7.Add juniper berries, peppercorns, star anise, and 2 bay leaves.
8.Bring to a boil, then cover and place in the oven for 2 hours.
9.Add potatoes and season to taste, then place back into the oven for an additional 30 minutes.
10.Remove the dish from the oven and let it rest for 10 minutes before serving with chopped parsley on top.
