1 package Simply Potatoes & reg ; Shredded Hash Browns
7 eggs
3 tablespoons vegetable oil
1/2 cup salsa
1/4 cup sour cream
Huevos Rancheros is a traditional Mexican breakfast dish that usually consists of eggs served with a spicy tomato sauce and tortillas. Instructions

1.Preheat the oven to 375°F. Grease a muffin tin with cooking spray.
2.In a large mixing bowl, combine the Simply Potatoes® Shredded Hash Browns and 2 cracked eggs. Stir well to combine.
3.Spoon the mixture into the muffin tins so that each cup is about 3/4 full. Use your fingers to press the hash brown mixture up against the sides of the tin to create little “tortillas.”
4.Bake the hash brown “tortillas” for 15-20 minutes, or until lightly browned and crispy.
5.While the “tortillas” are baking, heat the vegetable oil in a skillet over medium heat. Crack the remaining eggs into the skillet and cook to your preferred level of doneness.
6.To serve, place a “tortilla” on each plate and top with a fried egg. Spoon a generous amount of salsa on top of each egg and finish with a dollop of sour cream.
