Ingredients

6 eggs
1/8 teaspoon pepper
1 teaspoon salt
1/2 teaspoon ground coffee ( optional ) or 1/2 teaspoon tea leaves ( optional )
3 -4 yellow onion skins , the outer layers ( the more , the better ! )
1 -2 garlic clove , chopped ( optional )
1 teaspoon vegetable oil
1 teaspoon vinegar
Huevos Haminados, also known as Marranos, are traditional Sephardic hard-boiled eggs that are slow-cooked with onion skins, salt, pepper, and spices. This dish is an example of the Sephardic cuisine that is primarily found in Jewish communities in Spain, Portugal, and North Africa. The slow-cooking process gives the eggs a unique Sephardic taste and brown color. This dish is typically served over meals on the Jewish Sabbath. Huevos Haminados is a great option for a protein-rich breakfast or snack that can be enjoyed warm or cold.

Instructions

1.Boil the eggs in a pot for 10 minutes until they are hard boiled.
2.In a separate pot, fill it with enough water to cover the eggs, then add the onion skins, salt, pepper, and other ingredients.
3.Once the eggs are boiled, carefully add them to the pot with the onion skins and other ingredients without cracking them.
4.Cover the pot and simmer it for 1-3 hours, depending on how dark you want the eggs to be.
5.Once the eggs are done, remove them from the pot and let them cool for a few minutes, then peel off the shells and discard them.
6.Serve the warm Huevos Haminados immediately with a drizzle of oil and vinegar on top of the eggs.

PROS

This traditional dish is a perfect way to use leftover onion skins and has a unique Sephardic taste.
