2 tablespoons dry sherry
1 teaspoon salt
1/2 teaspoon black pepper
8 large eggs
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon parsley , finely chopped for garnish

Instructions

1.In a large skillet, heat the olive oil over medium heat.

4.Use a spoon to make eight wells, or indentations, in the sauce. Crack an egg into each well.
5.Cut the butter into small pieces and scatter them over the eggs. Season with salt and black pepper.
6.Turn the heat down to low and cover the skillet with a lid. Cook until the eggs are set to your liking, about 5-10 minutes.
7.Garnish with chopped parsley and serve with crusty bread or tortillas.
