Ingredients

6 large nopales ( prickly pear cactus paddles , cleaned of spines and glochids )
1/4 medium white onion
1 large garlic clove , peeled and halved
salt
6 6 slices monterey jack cheese or 6 slices gouda cheese
1/4 - 1/2 cup flour
3 eggs , separated , at room temperature
corn oil ( for frying )

Instructions

1.Cut the nopales into 6 pieces that are approximately the same size.

4.Place a spoonful of the cheese mixture in the center of each nopale piece.

8.Dip the stuffed nopales in the egg whites, coating them evenly.
9.Then dredge them in the flour, coating them lightly.
10.Heat the corn oil in a large frying pan over medium-high heat.
11.Fry the stuffed nopales in the hot oil until they are golden brown on all sides.
12.Drain the stuffed paddles on paper towels and serve them hot.
