Ingredients

1/2 cup vinegar ( Greeks use red wine vinegar which is not halal )
1 lb fresh okra
2 tablespoons oil ( if freezing ) or 8 cups boiling water

Instructions

1.Rinse the okra under cool running water, and then pat dry with paper towels.
2.Slice off the tops and tips of the okra, and discard them.
3.Fill a large bowl with cool water, and add half a cup of vinegar.
4.Add the okra to the bowl, and let them soak for 30 minutes.
5.After 30 minutes, drain the okra and rinse them with fresh water.
6.To freeze the okra, pat them dry and then rub with 2 tablespoons of oil to prevent them from getting slimy. Place them in a plastic freezer bag and store in the freezer until you're ready to use them.
7.To cook the okra, bring 8 cups of water to a boil in a large pot. Add the fresh okra and boil for 2-3 minutes.
8.Drain the okra and rinse them under cool water to stop the cooking process.
