2 large oranges
2 large ripe mangoes
4 passion fruit
4 teaspoons superfine sugar
4 tablespoons white rum
1 lime , quartered length-ways
coconut ice cream , to serve

Instructions

1.Preheat the oven to 390 degrees Fahrenheit (200 degrees Celsius).
2.Cut four large squares of baking paper that are big enough to wrap around the fruits.
3.Slice off the top and bottom of the oranges so they sit flat and cut the peel and pith off, so the fruit is visible and place it in the center of each parchment paper square.
4.Peel the mangoes and cut the flesh from the stone and slice it into thin pieces. Divide the mango between the four parcels placing it on top of the orange.
5.Halve the passionfruit, scoop out the fruit and sprinkle over the mango.
6.Spoon a teaspoon of sugar over each of the fruits, drizzle a tablespoon of rum over each, and then top each parcel with a quarter lime.
7.Fold up the parcels, sealing them tightly by crimping the edges and place onto a baking tray.
8.Bake for 15 minutes until the parcels are puffed up and the fruit is lightly caramelized.
9.Serve the hot fruit parcels with a spoonful of coconut ice cream.
