Ingredients

1 can black beans , rinsed and drained
1 1/2 cups extra-sharp cheddar cheese , grated

1 cup scallion , chopped , both white and green parts

1/2 red bell pepper , finely chopped

salt and pepper
6 tortillas , 8 inch

Instructions

1.In a medium-sized mixing bowl, mix together the black beans, cheddar cheese, cream cheese, blue cheese, scallions, onion, red bell pepper, jalapeno peppers, salt, and pepper until well combined.
2.Lay out the tortillas on a flat surface and spread an even layer of the cheese mixture on each tortilla, leaving a 1/2-inch border along the edges.
3.Roll up the tortillas as tightly as possible and wrap them in plastic wrap. Chill the tortilla spirals in the refrigerator for at least 1 hour.
4.Preheat your oven to 350°F. Remove the plastic wrap from the chilled tortilla spirals and cut them into 1-inch-thick slices.
5.Place the sliced tortilla spirals on a baking sheet lined with parchment paper. Bake the spirals in the preheated oven for 10-12 minutes or until lightly golden brown and hot throughout.
