Ingredients

12 slices pancetta
6 boneless chicken breasts , with skin
salt and black pepper
3 1/2 ounces butter , softened
1 tablespoon olive oil
2 lemons , juice and zest of
1/4 pint whiskey , of your choice
2 tablespoons honey
6 fluid ounces hot chicken stock
1 tablespoon flour
1 1/2 lbs potatoes , cut into small chunks
4 tablespoons single cream
2 ounces butter , softened
2 -4 garlic cloves , peeled & crushed
salt and black pepper

Instructions

1.Preheat the oven to 375°F.
2.Wrap each chicken breast with 2 slices of pancetta and sprinkle with salt and pepper.
3.Heat the olive oil in a large ovenproof skillet over medium-high heat and add the chicken to the pan.
4.Cook for about 2 minutes on each side until browned and transfer the skillet to the preheated oven.
5.Bake for 30 minutes.
6.In a small saucepan, mix together the butter, lemon zest, and juice, whiskey, honey, hot chicken stock, and flour over low heat.
7.Cook, stirring constantly until the sauce thickens.
8.Remove the skillet from the oven and pour the sauce over the chicken breasts.
9.Bring a large pot of salted water to a boil and add the potatoes.
10.Cook until tender when pierced with a fork, about 20 minutes.
11.Drain the potatoes and mash them with the single cream, butter, and garlic.
12.Add salt and pepper to taste and serve with the chicken.
