Ingredients

1 tablespoon peanut oil
1/4 cup green curry paste
3 -4 slices fresh ginger
1 stalk lemongrass , outter leaves discarded and insides finely chopped
1 cup coconut milk
1 lb shrimp , uncooked , peeled , deveined , and shells reserved for the stock
7 green tomatoes , peeled and chopped
brown sugar
4 green onions , thinly sliced
1/4 cup cilantro , chopped
1 small hot chili pepper , halved lenghtwise
1 stalk lemongrass , bruised and split in half lengthwise
1 garlic clove
3 -4 shallots , halved
jasmine rice , to serve

Instructions

1.In a large wok or deep skillet over high heat, sauté the green curry paste, ginger, and lemongrass for 2-3 minutes until fragrant.
2.Next, add the reserved shrimp shells and coconut milk to the wok, stirring constantly for 2-3 minutes.
3.Once the coconut milk has started to bubble, add the green tomatoes and brown sugar to the pan, stirring occasionally for another 2-3 minutes.
4.Finally, add the shrimp to the wok and cook until the shrimp are pink and fully cooked, usually 3-5 minutes.
5.Serve hot over jasmine rice, and garnish with green onions, cilantro, chili pepper, lemongrass, garlic and shallots.
