1 tablespoon soy sauce

1 egg white , lightly beaten
1 teaspoon cornstarch
2 tablespoons dry sherry

1 lb round steak , trimmed , cut into thin strips
2 tablespoons oil
8 baby carrots , julienne
2 stalks celery , cut into 3 inch julienne
1 red bell pepper , julienne
1 onion , quartered , thinly sliced
2 tablespoons oil
1 teaspoon crushed red pepper flakes
1 tablespoon ginger , peeled , finely grated

Instructions

1.In a small bowl, mix together 1 tablespoon soy sauce, 1 tablespoon dry sherry, egg white and 1 teaspoon cornstarch until well combined. Add thin strips of beef and let the marinade sit for about 10 minutes.
2.In another small bowl mix together 2 tablespoons dry sherry, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 tablespoon hoisin sauce, 2 teaspoons plum sauce and 1 teaspoon cornstarch. Set aside.
3.Heat 2 tablespoons of oil in a wok or a large skillet over high heat. Add marinated beef strips and stir-fry for about 2-3 minutes until browned and cooked through. Remove from the wok and keep aside.
4.Add baby carrots, celery, red bell pepper and onion to the wok and stir-fry for about 2-3 minutes.
5.Mix in crushed red pepper flakes and finely grated ginger. Add marinade sauce and beef strips back to the wok.
6.Cook for an additional 1-2 minutes until everything is heated through and the sauce has thickened.
7.Serve Hot & Spicy Szechwan Beef Stir Fry immediately over steamed rice or noodles.
