Ingredients

1 kg salmon fillet
1 kg salt
200 ml whiskey
6 g dill ( dried )
Hot-smoked salmon is a popular dish that is perfect for any occasion. Instructions

1.Line a large baking tray with parchment paper.
2.Mix the salt and whiskey together in a bowl.
3.Place the salmon fillet in the tray and pour the mixture over it.
4.Sprinkle the dill on top of the salmon.
5.Cover the tray tightly with cling film.
6.Leave to cure in the refrigerator for 8-12 hours.
7.Remove the salmon from the tray and rinse off the curing mixture under cold running water.
8.Pat dry with paper towels.
9.Preheat your smoker to 200°F.
10.Smoke the salmon for 2-3 hours over your choice of wood chips.
11.Remove from the smoker and allow to cool.
12.Serve chilled.
