Ingredients

3 egg whites
2 cups icing sugar , mixture
125 ml boiling water
135 ml cups thickened cream , whipped
cocoa powder
100 g dark cooking chocolate , chopped
62 1/2 ml cups thickened cream
1 tablespoon dry instant coffee
2 tablespoons boiling water
1 tablespoon Kahlua or 1 tablespoon Tia Maria ( optional )
Pavlova is a popular dessert that originated from New Zealand. The dish is named after a Russian ballerina, Anna Pavlova, who visited Australia and New Zealand in the 1920s. Hot pavlovas with Mocha sauce is an extraordinary dessert that combines the light and airy texture of pavlovas with the rich chocolate sauce made with dark chocolate, cream, coffee, and liqueur. Instructions

1.Preheat the oven to 150°C and line a baking tray with baking paper.
2.Use an electric beater to beat the egg whites in a bowl until soft peaks form.
3.Gradually add the icing sugar, about 1/4 cup at a time, beating until the sugar dissolves and the mixture is thick and glossy.
4.Spoon the mixture onto the prepared tray to make six mounds.
5.Bake for 45 minutes or until crisp and dry.
6.Combine the boiling water and coffee in a small bowl. Set aside to cool.
7.Place the chocolate in a heatproof bowl and microwave for 1-2 minutes until melted and smooth.
8.Add the coffee mixture, Kahlua/Tia Maria (optional) and cream. Stir until well combined.
9.dust the pavlovas with cocoa powder and spoon over the coffee chocolate mousse.
10.Serve immediately or cover and keep in the fridge until ready to serve.
