Instructions

1.Preheat oven to 350°F.
2.In a large mixing bowl, combine ground beef, chopped onion, chopped bell pepper, stewed tomatoes, oatmeal, crushed saltine crackers, dried cumin, chopped chipotle chiles in adobo, eggs, ketchup, salsa, and hot sauce.
3.Use your hands to mix the ingredients until well combined.
4.Place the meatloaf mixture into a 9x13 inch baking dish, pressing it down evenly.
5.Bake for 50-60 minutes, until cooked through.
6.Remove from oven and let it cool for 10 minutes before serving. Enjoy!
