Ingredients

1 cup ricotta cheese
1 cup crumbled feta
1/2 cup chopped hot pepper ( I used pickled red jalapenos )
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon black pepper
1 egg
Pam cooking spray
4 flattened chicken breasts
toothpick
olive oil
2 cups rice
1/2 medium onion ( chopped )
3 garlic cloves , sliced
2 cups spaghetti sauce , of your preference

Instructions

1.Preheat the oven to 375 degrees Fahrenheit.
2.In a large bowl, mix together the ricotta cheese, feta, chopped hot pepper, oregano, basil, black pepper and egg until well combined.
3.Place the flattened chicken breasts on a cutting board and spread the cheese mixture evenly over the top of each piece.
4.Roll the chicken breasts up tightly and secure each with a toothpick.
5.Heat a large ovenproof skillet and add the olive oil. Brown the stuffed chicken breasts on all sides, about 5 minutes.
6.When the chicken breasts are browned, transfer the skillet to the preheated oven and bake for 25-30 minutes or until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
7.While the chicken is baking, cook the rice according to package instructions and saute the chopped onion and garlic in a separate pan.
8.To serve, spoon the spaghetti sauce over the chicken breasts and sprinkle with sautéed onions and garlic. Serve with the cooked rice on the side.
