Instructions

1.Preheat oven to 375 degrees F (190 degrees C). Lightly coat bottoms and sides of 8 (6-ounce) ramekins or soufflé dishes with cooking spray.
2.Sprinkle 1 tablespoon sugar onto bottom and sides of each prepared dish; tap out excess.
3.In a large bowl, whisk together egg yolks, 1/4 cup sugar, Grand Marnier, and vanilla extract until well combined.
4.In a separate bowl, use an electric mixer to beat egg whites, cream of tartar, and salt until soft peaks form.
5.Gradually add 1/2 cup sugar, 1 tablespoon at a time, and beat until stiff peaks form.
6.Fold egg white mixture into egg yolk mixture in three additions, gently folding until just blended.
7.Divide mixture among prepared dishes.
8.Place dishes in a large baking pan and add enough hot water to pan to come halfway up sides of dishes.
9.Bake until soufflés are puffed and golden brown, 25 to 30 minutes.
10.Dust soufflés with powdered sugar and serve immediately.
