Hot German Potato Salad is a traditional recipe that originated in Germany and became popular in the United States in the 20th century. It's typically made with boiled potatoes, bacon, onions, and a hot and tangy sauce made with vinegar and sugar. The salad is often served warm or at room temperature and can be enjoyed as a side dish or a light meal by itself. Some variations of the recipe include adding mustard, pickles, or hard-boiled eggs to the salad.

Instructions

.Boil the potatoes in a pot of salted water until tender, about 10-12 minutes.
.While the potatoes are boiling, cook the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and crumble it into small pieces.
.Add onions to the bacon grease in the skillet and cook until soft and translucent, about 5-6 minutes.
.Sprinkle flour, sugar, salt, celery seed, and black pepper over the onions and stir to combine.
.Slowly pour water and white vinegar into the skillet, stirring constantly to prevent lumps.
.Bring the mixture to a boil and let it simmer for a couple of minutes until it thickens.
.Add the cooked and drained potatoes to the skillet, and toss them with the sauce until coated.
.Garnish with chopped parsley, if desired, and serve warm.
