Ingredients

1/2 cup rice
1/4 cup nonfat dry milk powder
5 large egg yolks
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 cups heavy cream
1 1/2 cups toasted pecan halves , roughly chopped

Instructions

1.In a large pot, add the milk, vanilla bean, canela sticks, and rice, and bring to a rolling boil over high heat.

3.Remove the vanilla bean and cinnamon sticks, and transfer the mixture into a blender. Blend it into a smooth paste.
4.In a separate bowl, whisk together the egg yolks, granulated sugar, and brown sugar until it becomes light and fluffy.
5.Combine the egg mixture with the rice mixture, and cook over low heat until it thickens.
6.Strain the mixture into a bowl and let it cool down completely.
7.Add the heavy cream and mix well.
8.Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions. Add the toasted pecans during the last minute of churning.
9.Serve immediately or store it in a freezer-safe container and freeze for later enjoyment.
