Instructions

1.In a large mixing bowl, combine confectioners' sugar and all-purpose flour. Slowly add in the chilled butter and use your fingers to rub it into the flour mixture until crumbly.
2.Add the beaten egg and vanilla extract to the mixture, and mix well until the dough comes together.
3.Knead the dough for a few minutes until smooth, wrap it in plastic wrap, and chill for at least 30 minutes.
4.Preheat the oven to 400°F (200°C).
5.In a large mixing bowl, combine white sugar and water. Stir until the sugar dissolves completely.
6.Add the beaten eggs, vanilla extract, and evaporated milk, and whisk until well combined.
7.Roll out the chilled dough and cut out circles to fit into individual muffin tins.
8.Pour the egg mixture into the tart shells.
9.Bake for 20-25 minutes until the filling is set and the pastry is golden brown. Let cool before serving.
