Ingredients

1 lb oxtail
1 onion , cut into strips
1 tomatoes , cut into chunks
2 potatoes , peeled and cubed
1 carrot , peeled and cubed
2 celery ribs , chopped
4 cups cabbage , shredded
2 garlic cloves , diced
1 bay leaf
salt and pepper
2 beef bouillon cubes
1 teaspoon paprika
1/4 cup tomato paste
1/4 cup ketchup
1/4 cup oil
8 cups water

Instructions

1.Heat oil in a large pot over medium-high heat.
2.Add oxtail and brown on all sides. Remove from pot and set aside.
3.Add onion, garlic, celery, and tomato and sauté until soft.
4.Add cubed potatoes, carrots, and shredded cabbage with bay leaf and beef bouillon cubes.
5.Pour water into the pot and bring to a boil. Reduce heat, cover and simmer for 2 hours.
6.Remove oxtail from pot and let it cool enough to handle. Shred the meat with a fork and add it back in the pot.
7.Stir in tomato paste, ketchup, paprika, salt, and pepper to taste.
8.Simmer on low heat for another 20-30 minutes. Adjust seasoning if needed.
