Honeycomb Yeast Crepes (Beghrir) are a traditional Moroccan breakfast dish made with semolina flour or a mixture of all-purpose flour and semolina flour. The crepes are different from regular crepes because they have a unique honeycomb texture as a result of yeast fermentation. The recipe is simple, and it can be ready in 30-40 minutes. They are usually served with melted butter and warmed honey flavored with orange flower water, which elevates the honey flavor. Honeycomb Yeast Crepes (Beghrir) are a popular and nutritiously satisfying breakfast or snack option for both kids and adults alike.

Instructions

.In a mixing bowl, combine the flour (or semolina) and instant dried yeast.
.Gradually add in the beaten egg, mixing well.
.Start pouring in the warm water (or milk) slowly, alternating with whisking the batter until well combined and smooth.
.Let the batter rest for 10-15 minutes, allowing it to slightly ferment and produce the honeycomb texture.
.Heat a non-stick skillet over medium heat and spoon the batter in small circles or ladles onto the skillet.
.Let the crepe cook for 1-2 minutes until bubbles start to form on the surface and the bottom is golden.
.Flip the crepe and cook for an additional 1-2 minutes on the other side.
.Serve hot with melted butter and warmed honey flavored with orange flower water.
