Ingredients

1 1/2 cups whole wheat flour
1 1/2 cups unbleached flour
3 teaspoons baking powder
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 cup sliced almonds
1/2 cup margarine
3 eggs ( reserve 1 egg white to brush tops )
1/2 cup honey
Honey Whole Wheat Almond Biscotti is a unique Italian cookie that is made from baking dough twice. As compared to other types of biscotti, it is healthier and rich in fiber. The recipe is also butter-free and made with whole wheat flour instead of all-purpose flour. The use of honey instead of sugar makes it a healthier version of traditional biscotti recipes, and sliced almonds add a nutty flavor that works well with the honey. This type of biscotti is perfect for breakfast and especially for those who are always on the go since it can be kept for a long time.

Instructions

1.Preheat the oven to 350°F.
2.In a large bowl, sift together the flours and baking powder, and then stir in the brown sugar, cinnamon, and sliced almonds.
3.Add margarine, eggs, and honey, and then mix well to form dough.
4.On a lightly floured surface, knead dough and then shape into two loaves.
5.Place both loaves onto a baking sheet lined with parchment paper leaving a space of 2-3 inches between them, and then brush the tops with reserved egg white.
6.Bake for 20-25 minutes or until the color of the crust turns into an attractive golden brown.
7.Remove from oven and wait until the loaves cool on a wire rack for 15 minutes.
8.Cut each loaf diagonally into 1/2 inch slices.
9.Put the slices back onto the baking sheet, and bake for an additional 5-10 minutes or until sliced pieces get crisped.
10.Take them out and let it cool. Serve as needed.

PROS

This biscotti can be kept for a long time since it doesn’t contain any moisture, which means it’s perfect for packing up and taking with you.
It’s also butter-free and made with whole grains & honey instead of sugar.

The sliced almonds provide a nice crunchiness and also add a nice nutty flavor to the biscotti.

CONS

There is no fat in this recipe other than from the almonds.

Also, this biscotti is quite crunchy and harder in texture than regular cookies and may not be suitable for people with dental issues.
