1 tablespoon cornstarch
1/2 cup sake or 1/2 cup rice wine
1/2 cup honey
3 fluid ounces rice vinegar
3 tablespoons light soy sauce
6 tablespoons sugar
This Honey Seared Chicken recipe is a copycat version of the popular dish served at PF Chang's and is a crowd-pleaser for any occasion. The chicken pieces are battered in a delicate mixture of flour, cornstarch, and egg and then deep-fried until golden brown and crispy. The tangy-sweet sauce made from a combination of sake or rice wine, honey, rice vinegar, light soy sauce, and sugar gives it a sticky and savory flavor. Instructions

1.In a medium bowl, whisk together flour, cornstarch, egg, water, baking soda and baking powder until smooth.
2.Dip chicken pieces in the batter, allowing excess batter to drip off.
3.Heat oil in a deep-fryer or large saucepan to 375°F.
4.Fry the chicken pieces until golden brown and cooked through.
5.Remove the chicken from the oil and drain on paper towels.
6.Mix light soy sauce, white pepper, kosher salt and cornstarch in a small bowl.
7.In a wok or large skillet, stir together the sake or rice wine, honey, rice vinegar, light soy sauce, and sugar until well combined.
8.Add cornstarch mixture to the wok and cook, stirring constantly, until sauce thickens.
9.Add the fried chicken pieces to the wok and toss to coat with the sauce.
