Ingredients

1 cup raw quinoa
2 cups water
1/4 cup oatmeal
1/4 cup water
1/4 cup milk
2 teaspoons yeast
3/4 cup warm water
1/3 cup honey
1/4 cup vegetable oil
3 tablespoons powdered milk
2 tablespoons sourdough starter ( optional )
2 1/2 - 3 cups bread flour
1 -2 teaspoon salt ( to taste )
1 cup whole wheat flour
2 tablespoons raw quinoa ( for sprinkling on top of loaf )
Honey Quinoa Bread is a new and exciting way to enjoy bread. It is made with raw quinoa, honey, sourdough starter and a blend of bread and whole wheat flour. Instructions

1.Rinse and drain quinoa, then put in a pot with 2 cups of water. Cover and simmer for 15 minutes. Turn off the heat and let it cool.
2.In a separate bowl, mix oatmeal and 1/4 cup of water. Let it rest for 5 minutes.
3.In a large bowl, stir yeast and 3/4 cup of warm water until yeast is dissolved. Let it rest for 5 minutes.
4.Add in the cooked quinoa, oatmeal mixture, milk, honey, vegetable oil, powdered milk and sourdough starter. Mix well.
5.Add in 2 1/2 cups of bread flour and salt, mix until everything is incorporated. Add more flour if necessary.
6.Turn the dough out onto a floured surface and knead until the dough is smooth and elastic, adding flour if necessary. This should take about 10 minutes.
7.Put the dough in a greased bowl and cover with a towel. Let it rise in a warm place for 1-2 hours until it has doubled in size.
8.Preheat your oven to 375°F.
9.Punch the dough down and put it in a greased 9x5 inch loaf pan.
10.Sprinkle 2 tablespoons of raw quinoa on top of the loaf.
11.Bake for 30-35 minutes until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
12.Allow the bread to cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
