Ingredients

4 chicken breasts or 800 g piece filet of beef
1/3 cup Honeycup mustard ( It is the best but if you can not get this 1 tablespoon Dijon to 2 Tablespoons honey will give you s )
1/4 cup cream
30 g butter
1 medium yellow onion , finely chopped
2 garlic cloves , crushed
2 teaspoons yellow mustard seeds
1 cup basmati rice
1 cup chicken stock
1 cup water
2 tablespoons parsley , finely chopped
1/2 cup coarsely chopped roasted macadamias
3/4 cup peas

Instructions

1.Preheat the oven to 375F (190C).
2.Prepare either the chicken or beef by lightly seasoning with salt and black pepper.
3.Heat the cream in a saucepan over medium heat.
4.Add the Honeycup mustard or Dijon mustard and honey. Stir until combined.
5.In a skillet over medium-high heat, melt the butter and cook the onion until soft and translucent.
6.Add the garlic and yellow mustard seeds, stir until fragrant.
7.Add the chicken or beef, cook until browned on both sides.
8.Transfer the meat to a baking dish and pour the Honeycup mustard-honey sauce over it.
9.Bake in the preheated oven for 15-20 minutes, until the meat is cooked through.
10.In a separate saucepan, prepare the rice by bringing the chicken stock and water to a boil.
11.Add the basmati rice and peas, reduce heat and simmer for 20 minutes, until the rice is cooked and the liquid is absorbed.
12.Add the chopped parsley and macadamias to the cooked rice.
