Ingredients

1/3 cup lime juice
1/3 cup honey
2 teaspoons light soy sauce
2 tablespoons cajun seasoning

1 lb raw shrimp , peeled and deveined
1 sweet potato , peeled and cubed
2 carrots , peeled and cut into rounds
1/2 lb sugar snap pea , ends trimmed and cut in half if large
2 cups shredded cabbage
1 red onion , cut into wedges and layers separated
1 tablespoon cornstarch
1/4 cup cold water
2 cups cooked brown rice

Instructions

1.Combine lime juice, honey, soy sauce, cajun seasoning, salt and pepper (if desired) in a small bowl and mix well until combined.
2.Heat a large pan and pour oil on it, add sweet potato and stir-fry for 5 minutes.
3.Add carrots, onion, sugar snap peas and cabbage and cook for another 5 minutes or until the vegetables become tender.
4.In the meantime, in a small bowl, dissolve the cornstarch in water.
5.Add the shrimp to the vegetables and stir-fry for 3 minutes or until the shrimp becomes pink.
6.Add the lime and honey mixture to the pan and stir well.
7.Add the cornstarch mixture in the pan and stirring constantly until the sauce thickens.
8.Serve the stir-fry on top of brown rice and enjoy!
