The Hominy-Pinto Burgers With Roasted Poblano Chiles are a delicious and healthy vegetarian alternative to traditional beef burgers. The combination of pinto beans and hominy creates a satisfying texture while the masa harina adds a subtle yet delicious corn flavor. Roasted poblano chiles add extra depth of flavor to the dish and make for a perfect smoky and slightly spicy kick. This meal is perfect for anyone looking for a healthy, meat-free option that doesn't compromise on taste or texture.

Instructions

.Preheat the oven to 400°F. Line a baking sheet with aluminum foil and coat with cooking spray.
.Place the poblano chiles on the prepared baking sheet and roast in the oven for about 20-25 minutes, turning occasionally, until the skin is blistered and charred.
.Remove the chiles from the oven and place in a bowl. Cover with plastic wrap and let cool.
.While the chiles are cooling, heat 1 tablespoon of canola oil in a large non-stick skillet over medium-high heat. Add the onion, garlic, and salt and cook until the onion is tender, about 5 minutes.
.In a large bowl, mash the rinsed and drained pinto beans and hominy with a fork until there are no whole beans or hominy kernels left.
.Add 1/2 cup masa harina, shredded Monterey Jack cheese, reduced-fat sour cream, and salsa to the bowl and mix well until everything is combined.
.Once the poblanos are cool enough to handle, remove the skins, seeds, and stems. Finely chop the flesh and add it to the bowl with the bean mixture.
.Mix the ingredients together until well combined and season with salt to taste.
.Divide the mixture into 4 equal parts and shape each into a patty with your hands. Coat each patty in the remaining 1/4 cup of masa harina.
.Heat the remaining canola oil in the non-stick skillet over medium heat. Cook the patties until golden brown on each side, about 8 minutes total.
.Serve each patty on a toasted whole wheat bun with desired toppings.
