Ingredients

1/2 ounce yeast
3/4 pint warm water
8 teaspoons ground ginger
8 teaspoons sugar
1 1/2 lbs sugar
2 pints water
2 lemons
5 pints water

Instructions

1.Dissolve the yeast in ¾ pint of warm water in a bowl and let it sit for 10 minutes.
2.In a pan, mix 2 pints of water, ground ginger, and 1.5 lbs of sugar and bring to a boil, then let it simmer for 20 minutes.
3.Cut the lemons in half and squeeze them into the pan, then remove them.
4.Strain the ginger mixture through a fine sieve and let it cool down.
5.Add the ginger mixture to the yeast mixture and pour in 5 pints of water.
6.Mix well and transfer to a large jar, leaving some space at the top and cover it.
7.Leave in a warm place for 24-48 hours, then transfer to smaller bottles and close tightly.
8.Leave the bottles to stand for a few more days to allow them to carbonate, then chill and serve.
