Ingredients

14 ounces rice noodles
8 ounces firm tofu , chopped into pieces no lager than 1/2-inch thick by 1-inch long
6 medium sized garlic cloves
1 lightly beaten egg
1 tablespoon bean sauce
2 tablespoons tamarind pulp
1/4 cup vegetable stock
2 teaspoons soy sauce
4 tablespoons oil
2 tablespoons sugar ( brown or regular )
1 teaspoon salt
1 1 teaspoon chili sauce or thai chili pepper
1/2 cup finely chopped peanuts ( or more )
1 lime
2 -3 green onions
fresh bean sprout
fresh cilantro

Instructions

1.Cook rice noodles according to package instructions
2.In a separate pan, heat 2 tablespoons of oil over high heat and add in the chopped tofu. Cook until firm and golden brown, remove from pan and set aside.
3.Using the same pan, add an additional 2 tablespoons of oil and sauté the minced garlic until fragrant.
4.Pour in the lightly beaten egg and scramble until cooked through.
5.Reduce heat to medium and add in the bean sauce, tamarind pulp, vegetable stock, soy sauce, sugar, salt, and chili sauce. Mix well to combine all ingredients.
6.Add in the cooked noodles and the cooked tofu. Mix well.
7.Toss in the chopped peanuts, bean sprouts, cilantro, and green onions. Mix again until well combined.
8.Squeeze lime juice over the top and serve hot.
