2 cups mild cheddar cheese , shredded

1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon oregano
1/4 teaspoon red pepper flakes ( add more for desired KICK ! )
1 dozen tortilla ( hard or soft )
