Ingredients

2 cups flour , plus extra for kneading and rolling dough
1/2 teaspoon salt
1 large egg
1/2 cup sour cream , plus extra to serve with the pierogi
1/4 cup butter , softened and cut into small pieces
5 large potatoes
1 large onion
8 ounces grated cheddar cheese

Instructions

1.Boil the potatoes in a saucepan filled with salted water for 25 minutes.
2.Saute the onion in a pan over medium heat for 8 minutes until caramelized.
3.Mash boiled potatoes and mix with caramelized onions and grated cheddar cheese. Add salt and pepper to taste.
4.In a large bowl, mix flour and salt. Add egg, sour cream, and softened butter. Mix well to form a dough.
5.Knead the dough on a floured surface and roll out the dough to about 1/8 inch thickness.
6.Cut out circles using a pierogi cutter or a drinking glass.
7.Place a spoonful of potato filling in the center of each circle and fold in half. Pinch the edges together to close the pierogi.
8.Boil the pierogi in salted water for 3-5 minutes until they start floating on the surface. Serve hot with sour cream on top.
